Grilled Pimento Cheese Sandwich
with Heirloom Tomato and Chipotle Aioli

KAMR News Channel 4 – Today in Amarillo
This recipe is one that is simple, elegant, and full of flavor. Those that are fans of The Masters know that the Pimento Cheese Sandwich is a staple for golf fans during the game’s most prestigious tournament. It also happens to fall right in the middle of the “Grilled Cheese Month” of April!
So…it makes perfect sense that I show you one of my favorites!
½ lb. Grated Sharp Cheddar
½ lb. Grated White Cheddar (mild)
½ cup Mayonnaise
1 oz Worcestershire
2 tbsp Pimento
To Taste Kosher Salt/Cracked Pepper
To Make Pimento Cheese:
1. Mix all dry ingredients thoroughly.
2. Fold in wet ingredients.
3. Season to taste.
1 oz Chipotle Pepper in Adobo (pureed)
1 ea Egg Yolk
1 tsp Garlic
2 oz Olive Oil
½ ea Lemon (juiced)
To Make Chipotle Aioli:
Whisk together chipotle puree, egg yolk, garlic, and lemon juice
Slowly whisk in olive oil.
Season to taste.
1 ea Heirloom Tomato
2 ea Texas Toast
1 oz Mayonnaise
1. Lightly toast Texas Toast
2. Spread mayonnaise on outside
3. Spread pimento cheese on inside
4. Add slice of tomato
5. Grill directly on grate or grill pan
