This recipe is a classic Tuscan salad featuring a stale bread, tomato, and the addition of one of my favorite summer fruits…the peach. Try this recipe at home, and if you want to experiment, add dark balsamic, nuts, other fruit, or olives.
- 2 Peaches sliced
- 10 Grape Tomato halved
- 1 Cucumber
- ½ Red Onion julienne
- 2-3 French or Tuscan Bread slices
- 1 Garlic Clove
- ½ cup basil leaf
- ½ cup baby arugula
- ¼ cup olive oil
- 1 tbsp Champagne vinegar
- 1 tbsp white balsamic vinegar
- Kosher Salt & Black Pepper
Add peaches, tomato, onion, and garlic to mixing bowl.
Add oil and vinegars, and season with S&P. Allow to sit for up to 1 hour.
Grill or Broil bread until lightly charred.
Tear bread into bite-sized pieces.
Toss all ingredients together (coating bread).
