Red Skin Mash
- 8-10 ea Red Skin Potato skin on
- 1 pint Heavy Cream
- ¼ cup Cream Cheese
- 2 sprigs Fresh Thyme leaves only
- TT Kosher Salt / Black Pepper
Quarter red potatoes.
Place in pot. Cover with water. Boil.
When potatoes are fork tender (approx. 10-12 min.) Strain.
Place potatoes (with skin) into food processor. Pulse.
Add heavy cream, cream cheese, and thyme. Pulse.
Season to taste. Pulse.
