Chocolate-Rubbed New York Strip
- 2 ea New York strip steak
- 1 tbsp cocoa powder
- 1 tsp SALT smoked paprika
- 1 tsp chili powder
- 1 tsp Kosher salt
- 3 tbsp unsalted butter
- 1 ea garlic clove
- 5 - 8 ea thyme sprigs
Melt 1 tbsp butter in saute pan.
Mix cocoa, paprika, chili, and salt together.
Generously rub steak.
Allow steak to come to room temperature after rub.
Sear both sides of strip in butter. Approx. 2-3 min./side.
Transfer to oven to achieve desired doneness. Temperature 125F for Medium Rare.
Remove from oven and rest for 2-3 min.
Slice and serve.
