Most people think about berries in salad during the Spring months. However, in today’s market, we are able to get great quality berries nearly year round! So I started thinking against the grain a little bit in terms of how/when to use these ingredients and developed this great Warm Mixed Berry Salad. The idea came about like this; “When do I like fruit in the Fall/Winter?”, and answering my own question reminded me of Cobblers, and Warm Pies…but…why not warm sides/salads?! And BOOM this recipe was born. Hope you enjoy! Check out www.myhighplains.com on Tuesday, Nov. 1, 2016 to see how I use this salad with a great sandwich.
Warm Mixed Berry Salad
- 1 part Blackberry
- 1 part Blueberry
- 1 part Raspberry
- 2 oz Sugar
- TT Fresh Mint Leaves
- Cinnamon ground
- Nutmeg ground
- Clove ground
Place all ingredients (except arugula and mint) into small sauce pot over low heat.
Warm slowly while carefully stirring (not to smash the berries).
Once sugar has dissolved, add 1/2 of the mint.
Continue cooking another 30 sec on low heat.
Place mixture onto bed of arugula and remaining fresh mint.
*Now you will notice that I didn’t use amounts on many ingredients. This is because this salad is so incredibly versatile that you can adjust any of the ingredients to your taste!
