Sometimes you just need to channel your inner Jeff Mauro and create a mind-blowing sandwich with a unique fall berry salad…and BOOM…HERE IT IS!
Grilled Brie and Fig Sandwich
- 4 ea Bread sliced (I like Honey Oat)
- 1 tbsp Olive Oil
- ½ ea Red Onion julienne
- 1 tsp Sugar
- 2 oz Fig Jam
- 4 oz Brie
- 1 ea Granny Smith Apple
- ¼ cup Arugula
- Optional Warm Mixed Berry Salad (recipe at http://1949catering.com/2016/11/01/warm-mixed-berry-salad/)
Saute onion and sugar in oil until caramelized.
Spread one side of each piece of bread with fig jam.
Slice brie and layer onto jam.
Top with arugula and onions.
Finish with a second slice of bread.
Add butter to saute pan.
Grill sandwich on low heat for approx. 2 min/side.
Cut in half. Serve.
