
Foil Baked Salmon
Ingredients
- 2 ea Salmon Filet skin-off
- 2 tsp Olive Oil
- 1 ea Tomato diced
- 2 ea Shallot chopped
- 1 ea Lemon
- 1 tsp Dried Oregano
- 8 sprigs Fresh Thyme
- TT Kosher Salt/Black Pepper
Instructions

Preheat oven to 400F.

Place salmon filet diagonally on a square sheet of aluminum foil.

Drizzle with olive oil. Season with S/P.

In mixing bowl, mix tomato, shallot, lemon juice, oregano, and thyme.

Spoon mixture over salmon.

Wrap foil up and around to create a “salmon package”.

Place “salmon packages” on baking sheet and bake for approx. 20 min.

Move “salmon packages” to plate and serve.
