On February 25, 2017, the Amarillo Family Support Services Center held their annual fundraiser at the Amarillo Civic Center to benefit victims and individuals in areas of domestic violence, sexual assault, behavioral health and more. This year’s theme was Mardi Gras, and NINETEEN49 Catering was on-site with Executive Chef Rocky Dunnam to create some amazing New Orleans-themed dishes. It was the second time NINETEEN49 has catered for the annual event, which this year welcomed 825 guests.
Chef Rocky himself filled the Civic Center’s Heritage Room with the savory aromas of such amazing entree dishes as fried shrimp with grits and boudin sausage with onion and potatoes.
Table settings were arranged thoughtfully with folded napkins and classical French-style silverware. Tables were adorned with masquerade centerpieces and featured glassware in traditional Mardi Gras colors of green, gold and purple.
Chef Rocky and his team are well-known for cooking on-site with interactive chef stations. The FSS event’s VIP chef station featured him preparing such quintessentially New Orleans and Mardi Gras-themed dishes as bourbon-glazed shrimp and scallops with okra rice.
Guests at the fundraiser were particularly impressed by the desserts. The strawberry-bourbon shortcake showcased our culinary team’s creativity as well as a prowess for tailoring dishes and menus around a well-articulated theme.
