Chef Rocky Dunnam and the team of culinary professionals at NINETEEN49 Catering are no strangers to creating quality corporate catering experiences. The team has catered for employee appreciation dinners, elaborate fundraisers, extravagant galas and of course festive holiday parties. One such celebration occurred at the Amarillo Civic Center on December 17, 2016, when the team arranged a fantastic self-serve buffet for Pantex. The third largest employer in the Amarillo community, Pantex’s holiday party was a gigantic event with a Hawaiian-themed design and menu that served roughly 1,000 hungry company leaders and employees.
As is usual for a banquet setup at the venue, our team of catering professionals set up two long buffet-style service tables for guests to proceed through and partake in the delicious entrees and side dishes. Two other tables were set up perpendicular to this procession for guests to grab dessert and complimentary bottled water.
The event’s Hawaiian theme called for lush citrus fruits and a verdant salad. The pineapple slaw (coleslaw in pineapple dressing with bits of pineapple), fresh tropical fruit mix and tossed greens with coconut vinaigrette dressing were all perfect additions to the menu and were all well received among guests.
As guests proceeded through the buffet line, they were greeted warmly with two unbelievable entrees: a kalua pig (pulled pork that had been slow-roasted to perfection) and steamed, sliced chicken wrapped in taro leaves (commonly known on the Hawaiian Islands as chicken lau lau).
Naturally, a great Hawaiian-themed holiday party calls for a great Hawaiian-themed dessert. The banana cream pie (made with fresh bananas, vanilla cream and whip) was a sweet conclusion to this delicious menu.
